What was Princess Diana's favorite food? The royal chef reveals the recipe!

Princess Diana, one of the most photographed women in the world, was also known and admired for her dietary choices that kept her slim and full of energy.

Royal chef Darren McGrady recently revealed the late princess's favorite dishes in a video for Delish price Times India.

McGrady became Diana's personal chef eleven years after cooking for Queen Elizabeth II, and claims that a dish Diana loved and even requested several times a week was oven-roasted stuffed bell peppers.

According to Royal Chef Darren: “Her favorite dish was bell peppers stuffed with courgettes, mushrooms, rice, garlic, Parmesan and mozzarella in a tomato and smoked pepper sauce. He asked for this dish several times a week and would often come into the kitchen and ask for his favorite dish, then we would chat while[eu]I cooked it,” he adds.

In his book Eating Like a King: Recipes and Memoirs of the Palace Kitchen, Darren gives a recipe for stuffed peppers that Diana loved so much:

Ingredients:

- 4 medium red bell peppers

- ¼ cup olive oil

- ½ cup coarsely chopped onion

- 1 cup finely chopped champignons

- 1 zucchini, diced

– ½ teaspoon dried oregano

– ½ salt and freshly ground pepper

- 2 tomatoes, coarsely chopped

- 1 cup rice, cooked and cooled

- ½ glass of water

- ½ cube of chicken or vegetable broth

- 4 slices smoked bacon, crispy and chopped

- 1 teaspoon fresh basil, chopped

- 4 ounces mozzarella cheese, diced

- 2 tablespoons grated Parmesan

How is it prepared:

Step 1: Preheat oven to 350 degrees.

Step 2: Chop the pepper and clean the insides. Drizzle with a little oil.

Step 3: Bake for 25 minutes and remove from oven to cool.

Step 4: For the filling, add oil to the pan and add onions, mushrooms, zucchini and oregano. Season the vegetables with salt and pepper to taste and fry.

Step 5: Next, add the tomatoes, rice, water and broth to the pan and cook for about 5 minutes.

Step 6: Add the bacon, basil and mozzarella to the rice mixture and sprinkle the peppers with grated Parmesan.

Step 7: Place back in the oven for 15 minutes until the cheese is melted. Served hot.
